Sunday Ponderings

Wow it has been a crazy week!! Thankfully it was followed by a super relaxing, no strings attached weekend!! J was in Atlanta for the Tough Mudder and I held down the fort... cooking, cleaning, hanging with Baci, relaxing, practicing yoga... :) Yesterday, I had an hair appointment with Dana who I completed teacher training with... I am loving the outcome - a darker shade with random hints of warmer, lighter color pops!! All good stuff and very natural looking - just richer in tone :) I also went to a mini spa night with Meg, her mom, and sister. We used all-natural exfoliators, facial steam bath, (2) masks... one was honey based the other cacao based! The cacao one LOOKED like pudding and actually had to be refrigerated. All of the products are edible, just in case... LOL. We finished with a toner and moisturizer; my skin still feels so amazing... I truly believe: You have to be good to yourself always and treat yourself sometimes :)

I have been trying to make a few fun dinners a week - lately the *fun* dinners have been on the weekends!! Last weekend, it was a Sweet Potato Kale Pizza from Two Peas and their Pod. I used ready-made dough from Sunflower Market ... AMAZING!! I will definitely be buying it again when quick, creative pizzas are on the menu again :)

Today, Chinese Curry Chicken is in the Slow Cooker via Full Bellies, Happy Kids, whose author has actually relocated to a new blog. It's currently cooking and making the house smell absolutely delish!! We have been loving homemade Asian food these days!

Ever since I began the QuickShape Challenge, I have been thinking more about why I am eating what I am eating .... I try to determine the benefits and outweigh the positive and negative sides to food/drink I am investing in and trusting in .... Everything we place in our bodies becomes a part of us, a part of our health; aren't you interested in food's effects on your body ?
I have read quite a bit in regards to curry and its benefits. It is an immunity booster, asthma combator, and it actually aids in easing joint swelling... Read more about curry's health benefits here.
Red onions are one of the foods I seem to be putting into everything I cook these days...And they are such a beautiful vegetable! I adore chopping them except for some of the tears that arise!! Then I find myself sticking my head in the freezer to relieve my eyes... J taught me this! Red onions contain the flavonal Quercetin which helps keep your memory in shape.. Love this :)
I also found that you should try to keep the outermost layers of the onions you chop in the meal, as these layers are most rich in flavonoids. Read more regarding red onion health benefits here.

J returns from ATL this afternoon, so I want dinner to be ready to go whenever he walks in the door... :) I will leave you with a photo I took of Baci this week...

Snowpocalypse Happenings

We received about 18-24" in snow in Denver over the last two days... Now, the sun is shining, and we are happy to say we are OK. The world hasn't frozen over, the zombies didn't come, and it's actually warming up a bit. Phew!!

I went in to work yesterday for half the day (1-5) just to skip off on all of the crazy weather on the roads in the morning... It was still a bit treacherous getting to the office, but barely any cars on the road, which made me breathe easier...

Today, we had a lazy morning. Justin got a massage in the Highlands; I have been reading Nicole Krauss's The History of Love. I took Baci on a nice long walk through snow, tiny streams of icy water, and pretty clear sidewalks (Thank you, neighbors ;)

This evening I am heading to a level 2 yoga class with a friend and possibly dinner and drinks afterwards. Pretty low key, but that's my style this weekend and I like it!

Tomorrow I am teaching yoga and later on we are heading to a friend's for a Super Bowl party. I really don't care much about the Super Bowl, but hey, I am happy to go to a party!! :) Cheers.

Here is a quick over view of the weekend .... I am pretty tired, so it is going to be quick! :) I got my book club book from the library today... History of Love by Nicole Krauss. I am about to start it tonight! Yay!!

Friday Night...
We attended the first ever Winter concert at Red Rocks ... the best outdoor music space on the planet :) The Icelandic concert featured intellectual rap - Common and Atmosphere!! Cold times, but FUN times!! ...with Crystal, Bonnie, Steph, Orench, and Sarah :)

Saturday Morning...
Gymnastics class at Qi. All upper body strengthening.

Saturday Afternoon...
Pho with Justin, Catrina, and Rokha and then a bit of fro yo with C & J in Arvada :) Great time catching up!!

Saturday Evening...
I relaxed at home and I DD'ed J so he could compete in the Colorado Beer Olympics downtown...

Sunday Morning...
Attended the Winter Yoga Teacher training morning session to support the new trainees and get a bit of a refresh:)
Went to Yoga Sculpt with 74 other people... Kicked my bootay as usual ... But what gives, we have one body, and who else is going to keep it strong and powerful ?! :)

Sunday Afternoon...
Showered up and went to the shooting range... Yes, I said shooting range... With J, Natalie, Chad, Christen, Joel, and Nick.. We were there forever waiting but it was worth it! I can only describe it as quite "shocking" ;)

Sunday Evening...
J treated me to Thai at Swing Thai... Yellow Curry Noodles with Brown Rice and Great Conversation ? Yes, please!!

My Mantra, My Words

After teaching class this afternoon, I thought more and more about the previous quote in yesterday's post... I came up with something I can relate to even more so in my own words... stemming from what my life is showing me right now...

Create SIMPLICITY in your life.
Know what to let go of and what to hold tight to.
You can only spread yourself so thin; quality is so much more important than quantity. Learning how to "say no" can be both POWERFUL and UPLIFTING. :) -R. May

I went to lunch with a friend after a fabulous gymnastics class and she shared this with me and I just knew I had to stick with this... Because we had just been discussing how it is so easy, so simple to say yes... But we have to remember we cannot give our everything to something. We still need some of ourselves to keep moving, to stay strong, to BE ourselves.

I'm off to a potluck!! LOVE.

This year and ongoing I want to be held accountable for my actions... Especially on the Nutrition / Fitness side of things. I teach yoga, I practice yoga, I spin, I "gymnastics," etc.... But I do not eat as well as I could. I am looking for a BALANCE between both Nutrition and Fitness. So, I have joined a a challenge at Qi Functional Systems called QuickShape... Four times over the course of 112 days/16 weeks, I will be measured by weight lost, inches lost, and skeletal muscle gained. The personal trainers will take photos of me each time I "measure in" in order to keep track of the physical changes... I will be given motivation from the trainers and other challenge participants over the course of the next 16 weeks...I will even be breaking on through to the "other side," trying out classes at QiRyders! Let's DO this!

Not just for 2012, I want to eat healthier forever. I want to be more mindful of what I put in my body. I may be working out a bunch, but what I put in my body affects everything. Eating right will make my workouts matter MORE.

Sarah Stanley, an amazing athlete and role model for me, put what I am trying to SAY and DO into the perfect words: "You can't have exercise without real, healthy food. It's like a car- you can't drive if it doesn't have wheels."

Treat your SELF right ::Mind and Body:: this year and EVERY year!! And remember to hold yourself accountable!

Countdown to 2012: Sequins Encouraged

I cannot believe the year is ending in a matter of hours. Can you ?
This year has been full of many things... good and bad.
I am ready to leave it behind and leap into 2012 head first, but not without forgetting what I have learned.
I invite you to enjoy these last remaining hours of 2011.
What will you take with you, what will you leave behind ?

I will take with me....
...the love and continuous words of encouragement from my friends and family.
...great memories of my father and uncle who I lost this year.
...all of the joys brought into this world - all of the friends who have added to their beautiful families this year.

The Winter Solstice reminds me that we are entering days filled with increasing light. How beautiful is that ? Celebrating Hanukkah during the Solstice reminds me how important it is to have light our hearts no matter how we are feeling...The light will always be there for us to hold on to, even in these dark days of wintertime.

Celebrate the light, celebrate the dark :) For the light would go unnoticed if there wasn't darkness after all.

Weekend Recap

Friday Night
Secret Yogi party at mi casa with 9 fellow yoga friends / teachers. I made my brownie pops, we exchanged gifts over yummy food, fine, and lovely conversation... We partied till midnight :) Fun times with really wonderful people.

Saturday Morning
Gymnastics at Qi with the husband and friends... I am becoming more and more comfortable in this class. Still sore, but I love it!!

What do you want for the holidays ?

It's a simple question.
But ... Is there a simple answer?

Just weeks ago many people were frantic to get in line to be the first to buy discounted flat screens... the newest gadgets, clothing on sale... In fact now we have two "holidays" when this occurs: Black Friday and Cyber Monday.

Our society is filled with the idea that we need things and more things to fill us up. I am convinced this certainly cannot be true, and we do not need to believe this silly notion. It is OK to want to want something for Christmas - nothing wrong with it. But remembering the reason behind WHY we are happy, I don't want this to be forgotten :)

To me, it is the relationships, the people, our families, unique experiences, goals achieved, dreams come true ... this is the stuff, the untouchable "things" that make a happy life.

So, I invite you to ask yourself one more time ... What do you want for Chanukkah or Christmas this year?
Make this your intention for December.. Pray for it, breathe it in...

I wish for...
1. ...my family and friends to be healthy, happy, and safe.
2. ...my husband to be guided in making the right decision.
3. ...Baci my pup to have a new friend... maybe in 2012, we'll see ?
4. ...my yoga friends to continue to follow their dreams.
5. ...my youngest sister to enjoy her last year and one half of college.

Asana Sunday: Anjaneyasana

English: Low Lunge / Crescent Moon

Sanskrit: Anjaneyasana

The name of this posed is derived from Hanuman, mother of Anajane, so at first he was called "Anjaneya". The pose is called "Cresent Moom" because of the shape of the body when in the asana. There are different expressions of this pose.

The entire body is utilized in this pose - especially the front of the spine. This is a great pose for students to practice prior to building a sequence into crescent lunge - because you learn/teach the alignment first while your back leg "rests" on the floor. I have also practiced this pose with the back toes tucked under in order to stretch the foot and further engage the back leg.

Benefits of Anjaneyasana
1. ...opens the heart, stretches the front line of the body, and possibly increases circulation.
2. ...increases flexibility in the front body.

Happy December!! November flew by, but let's be present shall we ?! 31 days left to go in 2011. So, what are your plans for month 12?

I wish to...

1. Have more Early Morning Dance Parties. This is when we blast 80s music throughout our house when we are getting ready for work and we dance around... It definitely takes the "Manic" out of my Mondays!!

2. Find our Christmas Tree and decorate it with biodegradable, DIY craft projects!! Stay tuned :)

3. Take Anusara yoga classes in Denver... I have only scratched the surface, just barely, but I would like to learn more :)

4. Go snowshoeing before year's end.

5. Journal not just before but also AFTER all yoga classes I teach.

6. Enjoy every moment that is left of 2011. Live the life I love.

It's Never to Late for a Wedding Gift!

My sister-in-law sent us our wedding gift in the mail (we married about 18 months ago) and we received it today in a monstrous box. Now that she is out of school, I think it was easier for her to purchase something now versus at that time... We are so thankful she gave us such a cool, functional gift!!!

I had no idea what had arrived in the massive Amazon.com box .. All I could think was, what did Justin order ? I thought it was some sort of piece of technology!

When I returned home from teaching, I saw J had opened the box and there sat a wrapping-paper wrapped box with a pretty bow!! And that's when I learned this was a gift from his sister... So, we opened box after box after box and in the final box, we found something Justin (and I think me ;) have "wanted" for a while... A Viking Professional Series Mixer.. Hooray!! :)

Time to make pizza dough, bake, and go nuts in the kitchen!!!

Asana Sunday: Adho Mukha Svanasana

I taught my eighth internship class this evening - 17 students in attendance!! It was a lot of fun, and I received great feedback from fellow teachers. I have never had teachers attend my class, but was lucky enough to have three this evening :)
Some of the feedback I received to saying what the pose is as opposed to just describing it to students. Saying the asana will give them a better idea of where to go if they are not watching me or cannot see me. Because of this feedback, I have chosen to write about a different pose every Sunday in order to better learn the names of the asanas - I would like to ingrain them into my brain!
My husband gave me this idea, but I will also be speaking to a single pose and also describing the background or story behind the pose - why the pose is called what it is called.
Hopefully this weekly post will aid in enriching my teaching as well as my students' understanding of the postures.
The first pose I have chosen to speak about is in my mind the most widely known, the most fundamental yoga asana.

Primary Muscles used: Trapezius, Latissimus Dorsi, Triceps, Gluts, Hamstrings

I am still searching for the story or the reason behind this pose... Some sites discuss the body becoming a ray of light - when in Down Dog drawing the focus from the pelvis to the throat. I'll see what else I can find.

Today is Justin's Birthday!! Hooray!! I took himout for dinner last night and tonight he is playing dodgeball with his team andthen we may grab a drink afterwards :) Gotta love Birthdays!!

On October 22nd, Justin attended VeloSwap, the largest consumer cycleexpo!! He returned with some goodies for his bike. He also came home witha pretty cool surprise!! He bought me a bike!! This isn't just anybike...

We believe it to be a 1970s-ish bike...'76, maybe? It's a Schwinn Collegiate 3-speed... Just riding it around makes me feel asthough I am back in time.... back into the 70s or something :) And I have thecutest little bell!! LOVE IT!!

We ordered new tires for it as when Justinpurchased it, the originals were still on the bike. I cannot wait to take itout for some longer rides to the Highlands!!!

Don't you remember that super cool art "toy" from the 80s and 90s that would allow you to draw the coolest shapes perfectly - circles, parabolas, curves, they went on forever!! Oh, the spirograph. I literally had to google "80s toys drawings" to remember the name of the thing!!

The past week leading up to Halloween has been an interesting one!! Denver got about 12 inches of snow on Wednesday...It was kind of strange because all of the trees still had their leaves. Driving all over town, I saw many tree limbs down and some neighborhoods were without power for 24 hours plus!! Everyone was hypothesizing so many limbs were down because the trees were heavier than normal, still holding their leaves... Oh, Denver.

But as the week progressed, it became increasingly warmer - just in time for Halloweekend!!

We went out Friday night to Justin's friend's party in Wash Park and didn't stay out too late, knowing that we had another party to attend the following evening. Saturday morning, we grabbed our usual Pho and chit chatted about the upcoming evening and the night before. I made it to the gym for some cardio and arm balances... The gym is OK but I would really rather just go to Qi! ;)

Saturday night was an absolute blast. We all got ready at our house .. curling hair, applying makeup - including freckles and stars on our cheeks!! Sparkle hairspray and blue hairspray (Justin only) were also part of the picture... We dressed up as Rainbow Bright and the Color Kids (all of her friends). I was dressed as Patty O'Green who is the character who is responsible for all things green on the planet. My "homemade" costume was cute, though next year I will probably go as a character that is more recognizable!! Group costumes are the best, though!!

It was quite fabulous seeing friends I hadn't seen since the summertime... Especially in costume!! Halloween has to be one of my favorite holidays.. dressing up is the best!

Today, I loaded up with liquids before heading to Qi for a Qi Kettle-Barre Master Class - {2} hours of booty-kicking with Kettle Bells and Barre work!! Holy Moly! I am so psyched for this new program!! The program was super cardiovascular, just the ingredient I have been missing in my workouts!! Whoo-hoo! :) And it is such perfect timing to launch before the holidays... Let's shock our bodies more than ever as it gets colder and we eat sweeter things!!

Speaking of food, I made a silly goal today (and I only say "silly" because of my cheese obsession)... But I have decided to stick with it. I resolved that I would eat no more pizza for the remainder of the 2011 calendar year. Pizza is such an easy thing to look to when we don't feel like cooking... But Pizza no more... I need to eat more greens, more fruit, and less greasy, fatty foods. Homemade cooking is where it's at!

They turned out great ... If you decide to try the recipe, check out Delish :) Some things to keep in mind....

1. My recipe yielded (8) not (12) pies. I might have made the cookies to small, but they seemed pretty large to me!
2. The recipe instructs 3 tsb of filling/icing per sandwich, but this amount tended to be too much and dripped off some of the pies. I recommended 2 tbs.
3. Make sure to have some milk nearby to wash these babies down as they are uber rich!

Squares and Ovals

Today was a successful day.. Even though it feels like a lazy Saturday when it is all said and done; I still feel somewhat productive. I needed THIS day to catch up on sleep! The last day I have slept in past 6AM had definitely been forgotten until today. Gotta love Saturdays!!
I pulled together my Halloween costume and ate pho with a friend our favorite pho place... They definitely know us as typical customers these days.. I just seem to crave it every Saturday morning... Thankfully, it is a healthy thing to crave!!

After pho, we went to the Spirit Halloween store to check for costume accessories... I found green and white-striped tights and green hair spray... Later, we headed to Target where I found the perfect green skirt...Well, Catrina found it... (kid's section, but it works and it was cheap!) I also found 15 glow stick bracelets for $1 in the dollar section. Love it!!

I ended up stopping in Hobby Lobby, shocker, I know! I needed 6-square frames for photos I had ordered for our living room. I have a clear obsession with square photos... They are so unique and really capture photos differently from your everyday, typical 5x7 print. Most of the photos I take these days are square .... They are just more fun! Below is some inspiration for the Square... Be sure to check out Ritz Pix - they offer a few size options in square prints... I am so very excited for my 12x12 prints!!

HL was a good stop as I also needed to make a new wreath for our front door to celebrate the fall season - the spring/summer wreath just wasn't doing it anymore. So, I bought a few items to make a quick "Fall" wreath and walala. It is now "Fall" at the May household!!

I am off to continue reading Carlos Ruiz Safon's The Shadow of the Wind...Thus far, this is quite a thrilling book selected for our Book Club this month... Halloween-related of course :)

Tomorrow, we are off to start workout "55"... 1 squat, 54 push-ups. 2 squats 53 pushups. 3 squats 54 pushups........ 54 squats, 1 -push-up. After that, if I am still able to walk, we are completing some running drills... Should be interesting ;)

In the afternoon we are finding the perfect pumpkin at the pumpkin patch and running through corn mazes :)

With Fall quickly approaching (September 23rd), I have been thinking a great deal about change and new beginnings. While the seasons come and go, we are going through our days, going through the seasons. But what if we were to treat the seasons as though they were an OPPORTUNITY for change in our own lives? It make a lot of sense if you think about it. We all deserve a chance for a new start. The start of Fall is about turning the page and beginning a new chapter of our lives. It is a time of letting go of the summer rush and settling and melting into the cooler, slightly heavier feel that is Fall.

We eat different foods when fall hits - chili, butternut squash bisque, pumpkin everything, apples ... We begin different activities - college football (Warrr Eagle!), school, tailgating, Halloween, cozy parties by the fire pit, harvesting the garden ... We dress differently - starting to layer to keep ourselves warm ... And of course nature is in charge of the Fall - leaves changing colors to beautiful shades of orange, red, and yellow... cooler temperatures ... the night meets the day sooner than before as the days grow shorter ... Change is all around us now!!

So as we enter this new season, think about something in your life that is exciting or new that is happening in this great season... Keep this something close to your heart as our lives blend into Autumn... Or maybe you are ready to close a certain chapter in your life and turn a new crisp, white, blank page... Focus on this during the next week and focus on this new page as a clean slate, a new beginning. Change can be good for all of us - Embrace change as it is an opportunity, a chance for us all.

We arrived home yesterday evening after traveling about 24 hours from Istanbul, finishing in Denver. Though I only could sleep a few hours last night, I am trying to get unpacked, launder laundry, and get back to REALITY! This morning I took Baci on a walk in our park and met some nice old men and their dogs. It was super foggy and a tid bit chilly considering I missed the summer to fall change of weather being out of the town the first two weeks of September!! But it is nevertheless refreshing and so great to be home!!

In the next series of posts, I will be outlining our honeymoon - travels to Greece and Turkey and many airports in between! All in all Justin and I shared an incredible vacation and we are ready to plan and save for our next trip!!

A Time For Travel

In two days... we leave for our long-awaited honeymoon!! We are traveling to Greece and Turkey!! It's going to be an amazing trip! Justin has never been to Europe before except for this summer for a business trip. So, I am especially excited for him to have his first VACATION in Europe!!!

Good Friends, Yoga, & Squash

This weekend, my best friend Christin and her boyfriend, Mike, came into town to visit. We did a lot of yoga, a lot of walking, and lots of site seeing! Christin and Mike and the hubs attended my first yoga class ever - part of my Seva project - at Qi Edgewater. This was incredibly exciting and comforting to have them in town for this first-time type of weekend.

For my first class, I had my students donate oatmeal to the charity of my choice. I had 8 friends attend the event, and I was super psyched about this because the studio was truly filled!! Being my first class, I was most definitely a bit nervous so I went a lot faster than I thought I was going. I ended up teaching class with 20 minutes to spare! Holy Cow!! My friends who attended gave me wonderful criticism that was super helpful for my class I taught this morning. I really enjoyed having my friends as well as fellow teacher-trainers in my class!!

The rest of the weekend, we focused on Colorado beer for Mike and fun times downtown for all. Saturday evening, we walked Lodo and grabbed pizza at Buenos Aires. Later, we ended up meeting Mike's friends at Rock Bottom. From there, we went to Wynkoop and goofed around. Christin ordered a soda and I ordered a Shirley Temple.
YUM!

Sunday morning, we cooked breakfast and drank coffee as needed! We hiked around the lake by our house with Baci and then walked back to my house to get ready for the Rockies vs. Dodgers game. This game was a lot of fun - especially went we started walking around (innings 3 and on). Justin ran into a friend and we had a blast checking out the rock pile and just being silly...

Later on, we walked around downtown, took photos, and then decided to head home for a bit of a rest!! We all became super hungry at some point and headed to the Highlands for tons of SUSHI!! I ate as though I had never eaten before and we had a blast :) After returning home, we hung out in the basement and decided to play Dance Dance Revolution. We formed teams and became super competitive - but kept it fun!! What a fun workout!!! After playing till midnight, we called it night...

This morning I woke up thinking "I get to teach today!". Today, I had 3 students and I actually didn't mind it. I made a strong effort to show a lot of the alignment to my students, but I avoided chataranga dandasana as my wrist was feeling a little tender. This time around, I slowed my pace - especially during Sun B. I really allowed the students to inhale their leg high from the inner thigh - to really feel the extension from the inner thigh the to the heel. I themed off of the breath and how we can do ANYTHING we want to do in this world as long as we continue to breathe through it!! I chose this as my theme because during Saturday's class, I didn't feel as though many of the students were breathing or were guiding their bodies with inhales and exhales. From this, I knew I needed to accentuate this essential part of the yoga practice. Class went really well I thought. We ended with a five minute savasanah and I was told my class was 100% improved from Saturday's class!!

Whoohoo!!

Today we goofed around and I took Christin and Mike to Great Divide Brewing Co. for a beer tasting. Before we knew it, it was time to head to the airport!! I miss them all ready - what a blast we have had all weekend :)

This evening.... Justin and I decided it was time to start working with our 6+ huge squash... Justin sauteed veggies while I baked the squash... Summer Squash Bread and Summer Squash Choc Chip Muffins and mini loaves!! We still have more squash to cook - so this week should be super interesting and fun!!

I am really excited this evening as I am embarking on a new segment of my yoga journey! This weekend will mark my first class where I will be the teacher. The first 6-8 classes I teach will be donation-based Seva classes where we practice yoga together while also contributing to those who need a lift in their hearts.

I went through the flow once this evening as my husband scurried about the house... He must think I am crazy by now saying all of this stuff out loud ... but this is just the beginning!!

Today is my second to last day of yoga teacher training workshop!! It is both sad and exciting but I am also looking forward to the next steps - where am I going next and what does life have in store for me now ?

I slept incredibly well last night which doesn't happen all the time... I think it has something to do with the theme I kept going back to in my current practice. Finding the beauty within and all around us. How do you react to the beauty and the simplicity that you see in this world ? Mary Oliver's poetry always catches a piece of my heart... Sweet Corn and Cashew Chowder...

The eve of the our BBQ I wanted to cook something light for Justin and I. Something vegetarian, something EASY! And that it was - all you need are the few ingredients below and a blender :)

Here is the chowder, adapted from Food + Wine magazine...

Ingredients...

3-1/4 c fresh yellow corn kernels (or 4 ears of corn)

2 c water

1/2 c raw cashews (I would revise this to 1/4 c, it was pretty nutty!)

6 tablespoons EVOO

1 small garlic clove (no need to chop, blender will do it for you!)

2 tsp kosher salt

1-1/2 tsp chopped cilantro leaves (for garnish)

Freshly ground pepper (for garnish / flavor)

Directions...

n a blender, combine 2-1/4 cups of the corn with the water, cashews, olive oil, garlic and salt and puree until smooth. Pour the soup into bowls. Garnish with the remaining 1 cup of corn kernels, the cilantro and a sprinkle of pepper, then serve.

Shabbat at Mi Casa

This past Friday I had a nice reunion with two friends I met on my Israel trip! My friend Laura came in town from Pennsylvania and my friend Chelsea and her boyfriend Zach came from Boulder. Justin was there of course, too :) We did the full Shabbat at my house - it was great doing this with friends who I had shared this experience with in Israel!

We did the whole shabang... All the prayers - for the wine, the bread, and the lighting of the Shabbat candles. I ended up making veggie pizzas as Laura is a vegetarian - Justin ended up making homemade pizza dough and helping me out a bunch with dinner since I had to run all over town to pick everyone up from two bus stops :)

Chelsea and Zach brought Challah from Udi's (YUM!), Manischevitz (which I hadn't had since forever!), and salad. So, Friday really was a true Shabbat - our way!!

We had a wonderful time catching up over yummy food and drink!! We gabbed forever and then someone mentioned they wanted something sweet, and next thing you know we are driving to Scrumptious in Olde Town Arvada - an awesome sweet shoppe! Later on, we came back to my house for a bit and then headed into the city to watch Chelsea and Zach's friend play in his band.

I am hoping to gather more pictures from the evening from Laura to add later!!!

It was a good night had by all :)

My Spring Wreath...

My friend had a spring wreath making party a couple weeks back. You can see if I have wreath obsessed ever since a visit to Williamsburg during the holidays; check out my post from December.

Considering it has been Seattle-ish here in Denver with a "chance" of sunshine... I am happy the Spring/Summer weather is here! (And hopefully here to stay!) This wreath has reminded me that the warm weather really was/is coming!!! I ended up hanging it with the calla lilies at the top. I took this photo against our wood floors before it was hung up!

We have had a lot of RAIN. So much so that I believe we are in another place, say Seattle, Washington...

It was sunny most of the day for the first time in a long time and it just started down pouring!! I glanced over at my vegetable / spice garden and realized something GREEN was peaking up from the ground!! I threw on my sandals and ran out to be sure it was one of my plants!!

Low and behold.... we have the beginnings of vegetables. Now I have a different perspective of the rain... things may seem dreary on the outside... but on the inside... the earth is being fed and therefore everything is green and growing!!

What is up with the Colorado weather ? The month of MAY has been quite strange... Warm, sunshiny days and now this cold 40 degree stuff that I thought we were done with for a while ??? I guess I need to be thankful we are not experiencing severe weather / flooding as the south has been seeing over the past couple of weeks.

I completed a 10 mile hike last weekend with my pup in Greenland, CO with great views of Pike's Peak... There were many mountain bikers on the trail... I might have been one of two walking that whole afternoon!!

Last weekend I worked on another painting - acrylic and yarn... I bought a few more different sizes of canvas for more works I hope to begin next weekend after the deadlines wrap up for the week!

Last night after dinner, we went over to Three Dogs and then Elm Street on Colfax. It was a pretty fun night; it was much needed after this LONG week!! We grabbed some Phở this morning and I am about to head to a { yoga } posture workshop at Qi this afternoon. Should be good times!!

Moab - Spring 2011

A few weeks ago, a large group of us road tripped it to Moab, Utah. We camped in the true desert as most camping spots were too small for our group and many were all ready taken because of Jeep Safari weekend. The weather was pretty perfect although at night it got a bit chilly... But we always had a camp fire burning and music blasting and lots of friends all around - so we didn't really notice the weather change!

I was told to buy a harness for the trip as we would be doing some rock climbing and rappelling. I really had no idea what I was in for, but I bought the harness and was excited to try something new, exciting, and kind of risky I came to learn. But that's what adventure is all about, right ??

The first full day in Moab we looked for a camping spot - but we met new friends and hung out in the mean time - so, this wasn't so bad. I had Baci along with us for the weekend - so that was an adventure all its own and another thing to keep me occupied and take care of!! But I am so glad we brought him, he had a blast I think.

Later, when the rest of the crew showed up at our desert camping spot, we piled into trucks and made our way to Wall Street. One of the guys lead climbed and set up our climb. I borrowed a friend's shoes, as I learned how important shoes are for climbing - they are everything!!! Justin did a wonderful job climbing! He has super long strides and made it up without a problem; I was pretty proud of him! When it came to be my turn, I put on Sarah's shoes and was told to "go." Easier said than done! For me, this was a lesson in body alignment - for climbing. I learned that my booty needs to stick back and I need not be so close to the mountain!! I think my muscle memory from dance was creeping up on me, because my hips wants to be above my knees. But I learned this does not get you anywhere - where is the power in your thighs ? How was I to go up if I was standing straight as a board against the mountain ?!

I made up further than I thought I would and knew that I wanted to get the body positioning sooner rather than later! The following weekend, Justin and I ventured to Rockn and Jammin in Centennial to take a beginners class. We passed and then climbed on our own - Justin and I switched off being the climber and the belayer. Taking this class allowed us to understand all of the ESSENTIAL safety precautions, knots.... This was so helpful and I cannot wait to go back!!

Back to Moab...

That evening we made a fire, cooked dinner, ate s'mores and just hung out!! I tried a friend's beer from The Moab Brewery and made it a point to remember to buy a growler for Justin and I to share for the following evening...

The next day (Saturday) we ventured to Negroville Park (I need to double check the name). We hiked for a while and took some pretty neat pictures in narrow areas of rock formations. Moab was absolutely gorgeous!! Our hike would lead us to two locations where the group would be rappelling down two different cliffs. The first was down through a cave-like formation and the second was off an arch. I kind of freaked out here, so I decided to be belayed down... Next time I return, I want to do it right and rappel, but I know I made the right decision if I was that worried about it!!

After the 2 rappels, which was much much later as there were about 14 of us rappeling each time on one rope, we were among beautiful fauna. I wondered if this really was a desert because it was SO green! During that weekend, it was super cold and gray in Denver, so this was a nice treat for all of us!

I am hoping to camp at least 3 or 4 more times this spring/summer. It is such a blast; every time I do it, I want to do it even more often :)

Hello, Warm Weather

Justin left today for Auburn to see his sister graduate from Pharmacy School! I spoke with our friends tonight that he is hanging out with and wow do I miss everyone!!! I am staying in Denver as I couldn't take 4 days off from work....

This evening after yoga, I walked Baci for 90 minutes around our neighborhood, through the park, and around the lake!! It was warm and just plain gorgeous outside, even though it was cloudy. This is my kind of weather! I ended up being such a mom and taking zillions of pictures of him in front of the lake. (Dork, I know...)

I am so thankful to live in such a beautiful state :) I have to take advantage of every warm day this spring/summer!! Cheers to the warm weather...

With our one year anniversary approaching, we began to realized that we had not yet gone on our honeymoon, or any kind if trip we could consider our honeymoon!! Every bit of travel we have done in the past year has been for our lovely friends or for work.

We have been talking about where we wanted to go for quite some time... Costa Rica...St. Lucia...Nicaragua (Little and Big Corn Island)...Cabo...the list goes on!!

Last weekend I decided we needed to put our foot down and book our trip... After much research, I found a couple of great options - Barcelona and Ibiza, Iceland and Barcelona, Greece....completely different options from what we had started talking about!! I just figured if a flight to St. Lucia is almost $1000, why not fly across the world for just a little bit more ?!

So, we decided on a trip for September, and we couldn't be more thrilled!! We are headed to both Greece (Athens and Santorini) and Turkey (Istanbul). I am excited to research these countries and talk with people who have all ready been for good travel advice.

Traveling can really put your life in an entirely different and/or new perspective. This is what Israel did for me - I recommend leaving the country and exploring this world when you can ! It is wonderful to travel and be out of your element... Travels always become more interesting when you realize how much you have in common with people living in other countries - or just how different your lives may be. You may at times even feel WITHIN your element when travelling; this has always been very eye-opening to me.

THE AUBURN FAMILY CELEBRATES

AUBURN... To the alumni, the students, the fans... this word means so much! It meant so much this past weekend across the country and especially in GLENDALE, AZ!! Auburn is a true family, we chant "War Eagle" to everyone we saw in their burnt orange and navy blue. We arrived in the Phoenix airport from Denver and the plane was filled with both Oregon and Auburn fans alike. You could feel the excitement in the air and we were only on an airplane.

We touched down at the Phoenix airport and the place was filled with AU and Oregon!! It was funny being in airport of all places, finding you might have been wearing the same Auburn T-Shirt as somebody else. I am not sure Phoenix/Scottsdale/Glendale were prepared for all of the fans and spirit we were bringing... But as the BCS T-Shirts say and as we believe, Auburn Family: All In!!

We ran into some of Justin's friends from Auburn Wrestling when we were looking for our ride... Running into friends at the airport is really the best, it really is a small world!

Toniann, a good friend from high school and college, picked us up from the airport. I was excited to be staying with her and her husband Kyle, and their lovely Aussies, Luca and Leo!! They are like her children, I love them! Later on, we came back to the airport to pick up Justin's sister, Christin, who had won a free student ticket in a raffle!! (Yes, you read that right - a FREE ticket to the BCS Championship!!)

The weekend began with events Saturday night - we went to an "Auburn" bar in Scottsdale and met up with the Phoenix Alumni Club! Toniann was of course a member so I was able to meet other members and just have good time. The next day, we attended the Auburn Pep Rally. We listened while the President of AU spoke as well as Auburn's Athletic Director Jay Jacobs. We were surrounded by 50,000 other fans. It was a crazy set up, but a really great time!! Later on, we walked around Old Town Scottsdale and saw the Heisman Trophy in a museum! I was so happy about the weather - short sleeves, I hadn't worn them comfortably outside in while! There were definitely more Auburn fans than Oregon fans at the pep ralley, but maybe that's because we missed their part of the ralley?! I am not sure. Either way, it was a wonderful time! Auburn was taking over the town!

Though we didn't attend the game the following day, we tailgated yards away from the Phoenix Stadium and we really had a wonderful group of tailgaters, probably about 15 of us in total. Just being there all day - meeting new Auburn friends, seeing old (but good) friends, and being with family - this is what it was all about. This is why I was in Arizona.

Later on in the day, while tailgating, Justin's family arrived - his aunt and uncle from Seattle and his aunt/uncle from Orange County. It was a joy catching up with them as well as Justin's sister. We definitely missed having my in-laws with us tailgating for the final game of the season!

After we looked for cheap tickets that didn't really exist, we bid adieu to our friends going to the game and Justin, myself, Brad, and his aunt and uncle went to McFadden's to watch the game with some of Justin's wrestling friends. It was difficult to go over there knowing we were missing out on some history, but I have to tell you we had an absolute blast!!

During the commercials, the bar played an Auburn song and we did our cheers. During half time, the bar blasted music and we had one giant dance party for 30 minutes! I hadn't danced all weekend, so this was one of my favorite moments!! The fourth quarter was definitely the most stressful. I kept saying "Auburn, what are you doing?!?!".... I prayed for Auburn... I cried a little ... My heart was seriously RACING... I know everyone's was. I squeezed my husband's hand, shook my Auburn shaker, and seriously I was going nuts!!! 4th Quarter was dramatic. The game ended with a big Auburn Win. Auburn pulled it out the way they always pulled out - by giving all of us almost-heart attacks!!

Celebrating at McFadden's later, with champagne, friends, and the Auburn family - we were completely silly and seriously couldn't believe what had happened. Walking back to the tailgating spot, Justin decided to War Eagle EVERYONE we saw in blue and orange!! Everyone received a hug, too! I definitely videotaped this - we were overjoyed and I couldn't stop laughing at the whole scene! :)

I took more pictures of Justin's family and we said our goodbyes to our new friends we had met at the tailgating spot. I think Auburn fans would agree- this was a GREAT time had by all - no matter what, we were all in this together.

2011 GOALS + STUFF

I am not one for resolutions but it sure is nice to set some goals every now and then to stay grounded and motivated... The following are goals I have for 2011 and beyond...

1. RUN another Half Marathon... This keeps me motivated and moving!!
2. TRAVEL for our honeymoon or shall we call it an Anniversary-moon ?! St. Lucia is where it's at for now because we want to scuba and relax on a warm beach! Plus, it fits our current budget.
3. CREATE dinner menus every Sunday for the week.
4. SAVE with coupons. Only use coupons to buy things we really need.
5. BUY LESS stuff. Focus on what is around us and what we all ready have.
6. CLIMB more 14ers. One is all ready planned for June! ;)
7. Continue to live life to the FULLEST.

Snow on the ground and still falling, a documentary (actually about wine! - Blood into Wine)... A 3 day weekend ahead.. A new year not far behind. My husband introduced me to a fantastic wine the bossman asked him to buy... Khvanchkara, Georgian Semi-Sweet Red Wine. Absolutely scrumptious.

DENVER HAS SNOW!

It has been a while. It really has. We were predicted to have snow and we are still getting it!!! We will be getting it at least into tomorrow night the weather people are saying... I am absolutely psyched! The roads weren't bad, just had to be careful. I am sure Baci was surprised by the snow when I let him out after work seeing that there hadn't been any this morning (if dogs think that way! ;)

We are headed up to Silverthorne for New Year's weekend!! We are staying at a friend's condo with a group of friends, so it should be FUN times had by all :) I will be taking my first downhill ski lessons ever (I say "downhill" because I have skied cross-country ONCE. In New York. Not sure if that even counts ?!) Happy Happy!

FILM - BLACK SWAN

My itty bitty review of the really big movie... Black Swan...
I hadn't watched a scary movie in YEARS!! I love them, because I love not knowing what is about to happen. Black Swan was more of a psychological thriller. This movie was intense, reckless, graceful, twisted, lovely...! Nominated for five Golden Globes, the dancing was phenomenal; the acting was sensational. The film stars Natalie Portman, Mila Kunis, and Vincent Cassel. Natalie's role Nina Sayers is a member of a major ballet company out of NYC. She desires the leading role of the play Swan Lake, a role in which she must play both the White Swan - innocent and graceful, and the Black Swan - more sensuous and wild. She fits the White Swan's role perfectly, but needs to find the Black Swan within herself. The movie shows us a struggle between the two roles... I cannot say another word... Go see it!

I have been going nutso over this amazing band... NEEDTOBREATHE! They really do amaze me - their entire album is a true work of art. I can sincerely say I LOVE every song off "The Outsiders" album. Some may consider it Christian Rock - that is fine if that what it is - I just consider it AWESOME and SOULFUL... It is truly a rare occurrence when I can listen to a band's album over and over without getting over it quickly!! I cannot wait to see them live!

A WINTER RIDE ON PAVEMENT...

Sooo one question. Why is it snow-free in Denver and snow-crazy everywhere else in the US ?! This is so strange to me and I had to take advantage. We didn't have a white Christmas, but we will be skiing NEXT weekend, so we will definitely see snow before the end of the year, thank goodness!!!

OK - so back to taking advantage of this mild winter weather.. It was sort of warm out for this time of year. So, we decided to go for a ride on the trails! I was a bit chilly at first, but after a while it was PERFECT :) The ride was short - 90 minutes, but it was amazing to get so much fresh air right outside our door! I have been taking a break from running so this was oh-so-nice for the lungs...

One more thing to note - we were approaching a horse and its rider along with another cyclist. Right as we pulled up about 100 yards back, the cyclist seemed to spook the horse and the rider was whipped off the horse. He calmed the horse down while we waited behind, but I have to admit it was a bit scary out there for a moment! I am just glad the horse's owner is OK!!

CHRISTMAS EVE EATS

I was in charge of Christmas Eve dinner, kind of the prelude of what is to come for Christmas Day dinner, which hubs is in charge of. I always try to make something Justin has never tried before....

This year I came up with a vegetarian meal - Caprese Salad and Sweet Potato and Gruyére Turnovers... I knew Christmas day would be more "carnivorous", so this is where the vegetarian part came in...

Sweet Potato and Gruyére Turnovers

1 medium onion, grated

3/4 pound sweet potatoes, peeled and grated

1/4 cup olive oil

1 bunch Swiss chard, stems discard and leaves chopped

1/4 pound Gruyère, grated

1/2 tablespoon fresh thyme leaves

kosher salt and black pepper

2 refrigerated rolled piecrusts

1 egg

 1.  Adjust oven rack to middle position and preheat to 400°F. Pour the oil into a medium
saucepan and heat on medium high until shimmering. Add the onion, and cook, stirring
frequently, until soft, about 8 minutes. Add the swiss chard, and cook until wilted, about 5 minutes.

2.  Transfer mixture to a large bowl. Mix in the grated sweet potatoes, Gruyère, fresh thyme,
1/2 teaspoon salt, and pinch of black pepper. Let cool for a few minutes.
  

3. Cut the pie crusts in half, so you have four half circles. Spoon about 1/2-cup of the sweet
potato mixture on one side of each half circle, leaving 1/2-inch border. Fold the dough over
and crimp the sides. Using a knife, slice three openings on the top of the turnover. Repeat
with the other three half circles.   

4. Crack the egg into a bowl, and whip with a fork. Brush the top of each turnover with
egg. Line a baking sheet with parchment paper, and place the turnovers on top. Bake in the
oven until the turnovers are golden brown, 20 to 25 minutes
